Gets top marks from me. Yum, yum.
Using a fan oven (fairly new to me), 22 minutes was a bit long, the gooseberries were a little charred. Obviously, as it isn't August, they were from frozen which might affect it.
Next time, I'll turn the temp down by 10 degrees (probably).
Otherwise brilliant. (We need a thumbs up emoji )
P.S. I cooked it in a flan tin, not loose on a tray.

I have cooked this twice since then and it is still good (I have now run out of red gooseberries). My only revision might be to reduce the butter content a little.
Nothing is foolproof to a sufficiently talented fool.

I somehow killed my gooseberry I had on the next door plot I took on. I bought & planted a red one this year in a spot at the back. Not gonna be trying the recipe this year but the plant is healthy & happy as has wee flowers so fingers crossed for years to come!
