I made honeysuckle wine as a teenager and it was really wonderful, but I've never lived anywhere with such an abundance of honeysuckle since.

I suspect that a lot of home brewing gets chucked because people don't let it mature properly. OH brews beer and has several times produced stuff that we thought was undrinkable, last time it seemed to have been smoked! This always seems to happen in winter and we leave the bottles in the cellar for use as slug bait come summer. As yet the slugs haven't had anything he's brewed, because after another few months maturation the beer develops into something deliciously drinkable. He's drank the last bottle of the stout that originally tasted smoked this last week and that was made the autumn of 2004.
