2 medium courgettes – grated. (Leave the skin on)
2 tablespoons self raising flour
25 grms of finely grated parmesan cheese
1 teaspoon of sweet chilli sauce (optional)
1 tablespoon olive oil

1. In a bowl, combine the grated courgette, flour and parmesan (and
chilli sauce if used)
2. Shape into walnut size balls then flatten.
3. Heat a non stick frying pan over a medium heat and add the oil.
Fry the fritters for 2 -3 minutes on each side until crispy golden
brown.

I am going to try these Primrose, I grew courgette Goldie this year, prolific crop, amd the leaves are an attractive green/ gold, no mildew either. I was looking for a change of recipes, thank you, I might try with cheese and chopped sage as a variation too
