My husband found this recipe today for using up some of our surplus cucumbers. It was surprisingly tasty:

2 medium size cucumbers
oil for cooking
1 cup Coriander leaves or parsley
1 cup Rice flour or cornflour (ordinary flour is rather too heavy)
2 to 3 green Chillies or 2 -3 teaspoons sweet chilli sauce
1 onion (chopped)
2 clove garlic
Salt as per taste

Peel the cucumbers and grate them.
Remove the water from cucumber as much as possible, by squeezing in a cloth or kitchen tissue
Add chopped onions, chopped garlic, green chillies or chilli sauce,
coriander/parsley leaves and salt to the mixture.
Add rice / corn flour to mixture.
Mix well to make small balls.
Next, heat oil on a non stick frying pan
Spread each ball on the pan, by pressing flat with a spatula
Cook on both the sides until nicely browned..
Serve with tomato ketchup.

Sounds tasty Primrose, wondering if gram flour would work too, sounds a bit like onion baji, lol, not sure how to spell baji !

Yes, I imagine gram flour would work and mixing in a little garam masala or other Indian spices would certainly give it a more Asian effect.
