When you get tired of using up your courgettes in soups, ratatouille & curries, please have a go at this:
Courgette Halwa Ice Cream.

I can guarantee that this tastes absolutely fantastic. And I'd happily eat it again and again (and if you were offered it, you'd never guess the ingredients!)

It's probably also one route to a wacky dinner party where there's courgette in every single course :oops:

Colin, this sounds really cool, lol I was going to try it but when i followed your link I couldn't find the recipe quantities.

I made this when I bought your daughter's book last year and it tasted very good indeed. I've even bought some lolly moulds to make it into ice lollies this year.
