I make this regularly and with any veggies not just the ones in the recipe.
This week I made it with sweet potatoes, leeks, cauli, broccoli, red onions. And we made up some dried coconut milk to make it a bit special.
Delish. :D

Moroccan Veggie one pot.
Serves 6
For the chermoula paste
2 red onion, (I used one red and one white as that's all I had)
3 cloves garlic
small knob fresh root ginger, peeled
100mls lemon juice (about three lemons)
100ml olive oil
1 tbsp each honey, cumin, paprika, turmeric
1 teaspoon hot chilli powder (I used half)
a handful of coriander chopped (did not have these)

For the Tagine
1 tbsp olive oil
3 carrots cut into chunks
3 large parsnips cut into chunks
3 red onions cut into chunks
2 large potatoes cut into chunks
4 leeks ends trimmed and cut into chunks
12 dried prunes dates or figs
2 sprigs mint leaves only finely chopped

• Whizz the paste ingredients in a blender.
• Heat oven to 220 C fan 200C gas 7
• Tip oil and veg into a heat proof casserole and cook on hob till lightly browned about 7 minutes you may have to do this in batches. (Did not really bother about this part)
• Add the chermoula paste to the casserole along with dried fruit and pour in 400ml water Mix well
• Cover with a lid and cook in the oven for 45 mins
• Reduce heat to 180/160/4 and cook for a further 45 mins
• Sprinkle with mint and serve on its own or with couscous or crusty bread I did not have any mint.

I don’t like prunes so when I had cooked the dish I removed the prunes which worked well.

Thanks Catherine - salivating reading the recipe! I
have never made the chermoula paste usually using
a dry mix but love the idea of the touch of honey in
the paste which woudl really lift the flavour of the
veges.

That's Saturdays supper sorted.

I tried this today Catherine, it was very nice indeed. It didn't need as long in the oven for me, and I broke some eggs on top for the last few minutes ( because we have lots at present!). I think it will become one of our regulars. :D

Thank you Pongeroon, I am glad you liked it as it is one our regulars too. I also have a bean recipe which when I have time I will put on. It is a sort of three bean curry and has almost a meaty taste but better. We like it alot. Although we are not vegetarians we do move more towards that kid of cooking.

My OH has a really good chicken curry recipe I will also put that on the website when I have time in the week. We have eaten that tonight.

I am now moving on to stir frys, something we have never really got into so if anyone can give me any tips I would really appreciate it.

Catherine - it was fab. The spices made up into a paste
gives so much more flavour than the powdered mix I
have. I ommitted the figs and threw in some chickpeas
as well - really filling and delish.

I'm also getting into stir fries -started ernestly last year
growing wok broc, chinese cabbage and all the 'choys' I
could find. I also found a use for the mooli cut into matchstick
sizes and thrown in for crunch. They were all pretty lovely
but this year I'm going to do more experimenting with the
sauces as I think the perfect mix is for the taking. My current
favourite is sweet chilli, Lt soy, pinch 5 spice, honey and lime or
lemon juice - not too hot but all the flavour and served with the
fat meaty noodles. Let us know how you get on.

Hi Westi, Glad you liked it, I used prunes or ready to eat apricots, but hoik them out when it is cooked.

I like the sound of your stir fry mix, I am making one tonight so I will probably try it. Will let you know how I go on.

I have another couple of recipes to add yet. If I have time I will pop them on.
