Blackcurrants in puddings

Has anyone got any good recipes for using blackcurrants and redcurrants in winter puddings? I have quite a lot which look at me in a sad, neglected way whenever I open the freezer.

Next year why not throw all your surplus summer fruit in a rumtoph jar with your spirit of choice sweeten to taste and let it marinate till xmas delicious over icecream.

Liqueur, use vodka as a low impact base. :P

I put some fruit in a pyrex pudding basin with some sugar and put a basic sponge mixture on top - 2oz sugar, 2oz butter, 2oz SR flour, 1 egg and a drop of milk. Cover with cling film and microwave for 5 or 6 minutes and serve with custard or ice cream. Don't put too much fruit in or there will be an excess of juice. Or you can stew the fruit briefly first with sugar and save some of the juice to pour over the finished sponge.

You can do the same with chopped up apples and put a spoonful of golden syrup and a squeeze of lemon juice instead of the sugar and top with the sponge mixture.

Very quick, delicious and easy.

Throw them still frozen into a muffin mixture and bake
Blitzed with a banana while blackcurrants are still frozen = instant sugar free icecream
