At this time of year, it's easy to get a glut of one or more types of veg.

For anyone who's sweltering in today's heat, here's another idea for using courgettes that you may not have seen before:
Courgette Halva (here, in the form of an ice cream )
Whilst these may look strange, I can confirm that the sweetness and spices combine with the courgettes to produce a wonderful taste! More info on how to make them here
