This is a seriously grown-up ice cream, rich tangy and a gorgeous colour. You can use any berries or fruit in the same way, adjusting the sugar to how sweet you want it to be.

1 lb blackcurrants
5 oz sugar
1 pint (600 mls) double cream

Put cleaned blackcurrants, sugar and 2 tblsps water in a pan and cook for a few minutes until soft.

Puree in a blender and put through a sieve to remove seeds.

Put in fridge to cool.

Stir in double cream and pour into icecream maker and process for about 20 minutes.

If you haven't an icecream maker you need to do the removing from the freezer and stirring a few times to break up any ice crystals and freeze until set.
