Have just discovered a large patch of purslane in the garden and have been busy looking for recipes.
Purslane is very nutritious, i.e. rich in Vitamin C and alpha linolenic acid (one of the Omega-3 fatty acids).
Had this yesterday and it was really good.
Purslane Pasta Salad with Cherry Tomatoes (Think this serves about 6)
6 cups cooked pasta shapes
3 cups fresh raw Purslane leaves
3 cups cherry tomatoes, halved
1/2 cup minced green onions
Dressing -
1/2 cup olive oil
1/4 cup vinegar
1 clove garlic
Pinch Salt
2 tsp Dijon mustard
1 tbsp honey
2/3 cup fresh, chopped parsley
Whizz all dressing ingredients in blender.
Combine cooled pasta, purslane, tomatoes and onions in large salad bowl.
Serve cold.
I cut the ingredients down to a third and stirred 1 tbsp mayonnaise into the finished dish with some cubes of cheese, but you could also add olives, sliced pepperoni if you like.
Scored a hit with my husband - he's quite used to eating weeds now
