Now that courgette season is upon us, thought you might like to try my latest recipe.
Quiche dish lined with shortcrust pastry of your choice
Olive Oil
1 medium onion, sliced
1 large or 2 small courgettes, sliced (yellow ones give best colour variation)
1 large plum tomato, sliced thinly
3 eggs
Salt and black pepper
Tablespoon creme fraiche (or a splash or two of milk)
3 oz Feta
1 tbsp fresh thyme, chopped
Salt courgette slices on both sides and fry in hot olive oil until slightly browned on both sides - set aside to cool.
Saute onions in same pan, adding more oil if necessary, until softened. Remove from heat and cool slightly.
In a bowl, beat eggs, add salt and pepper plus thyme, creme fraiche and/or milk.
Spread onions in pastry base, arrange courgette slices on top and then add tomato slices as decoration. Pour in egg mixture and top with crumbled Feta.
Cook in hot oven for approx. 30 mins or until Feta is browned and bubbling.
