Red onion and goats cheese pastries

This one is fab for taking to work for lunch as it can be eated cold or warmed up. It also freezes well.

Ingredients: Serves 4

15ml/1tbsp olive oil
450g/1lb red onions finely sliced
30ml/2sbsp fresh thyme or 2 tsp dried thyme
15ml/1tbsp balsamic vinegar
425/15oz pack ready rolled all butter Puff pasty
115/4oz goats cheese, cubed. A medium strength one if possible.
1 egg beaten
salt and freshly ground black pepper

Method:

1. Heat the oil in a large heavy based frying pan and add the onions. Fry for 10 minutes over a gently heat. Stir occasionally and don't let them brown.

2. Add the thyme, seasoning, and balsamic vinegar and cook for a further 5 minutes. Take off the heat and leave to cool.

3. Preheat the oven to 220C/425F/gas 7. Unroll the pastry and cut out 4 circles. Use a 6in plate as a guide. Place the pastry on a dampend baking sheet. Using the point of a knife score a boarder 2cm?3/4 in inside the edge of the circles.

4. Divide the onions among the circles and top with the goats cheese. Bruch the edges of the pasty with the beaten egg and bake for 25-30 minutes until golden.

5. Serve with a green salad.
