Hi folks
Anyone got anything for elderberries please? I was thinking jam/cordial wise if possible. Have done a search but to no avail....

Elderberry abd apple jelly
Equal weights of elderberries and apples (sliced but not peeled or cored).
1. Cook elderberries and apples separately with enough water to cover the fruit. Simmer until soft and broken up.
2. Strain through muslin.
3. Mix and measure the juices. Return to pan.
4. Add 3/4 lb sugar for every pint of juice. Stir until dissolved. Boil until set.
NB
1. You need the apples for the pectin. A bit of lemon juice helps as well.
2. I used to strain fruit overnight but 2 or 3 hours is often enough.

If you want to try your hand at wine, let me know. No more difficult than any other home wine & will give you something almost impossible to buy commercially.

Hi Mollysmum! I can help with a recipe for you both, but it hasn't been tested by me yet(currently maturing in a demijohn. I will look it up for you later when i'm at home. Just so that you know, it is better left for at least a couple of years before drinking, or it'll not be too nice! I transferred mine last night into it's current container, and it smells just dandy!
