Here's a good recipe for summer:
Ingredients
Bulghar (=cracked wheat, available from many supermarkets)
Two handfuls parsley (ideally flat leaved)
One handful mint
One medium or two small peeled raw beetroot
2 spring onions
Lemon juice
Salt & Pepper

Try this once, then adjust the quantities & ratios if needed. Use same amounts of dry bulghar per person as you would when cooking rice.

Put bulghar in a large bowl, pour on plenty of boiling water and mix (you'll find it absorbs lots, so add more if necessary after 10 minutes). Leave to stand for 20 minutes mixing periodically, then drain well in a colander. Put back into serving dish and add the juice of 1 lemon plus salt & pepper and mix well.

Chop up the parsley & mint and add, mixing well. Chop the spring onions and add.

Grate the beetroot and add, mixing carefully. At this stage the dish will start going pink, depending how moist the mixture is and how much you mix it!

As a variation to make a main dish rather than a side dish, I've also done this adding cubes of Feta cheese. You can also add a tbs of Olive oil, but leave this to the end to allow the bulghar to absorb the lemon juice.
