Never thought I would say it as the season seems to have been very slow compared to last year, but I now have loads of aubergines ripening, some of them huge! These are the classic black variety Black Beauty.

We are eating some fresh on their own or in dishes such as moussaka but wondered about other ways to use them or store them. Freezer space is limited though even with 4 of them in the house!

Hi jerry, assuming you don't want to make sweet greek aubergine jam (bleuurgh!) this might appeal?

There's a nice looking augbergine curry recipe in the September edition of the Sainsbury's magazine...
I haven't tried it out though!

Had an interesting starter at a local Thai restaurant last night - smoky aubergine with chilli & other stuff, can't remember proper name of it but it was gorgeous!!

I like roasting or grilling them whole - scoop out the flesh and mix with garlic, parsley and olive oil - delicious on toast or as a dip. Also dry fry slices and leave for a few minutes, then chop and add to garlic and mushroom flavoured cous cous - absolutely delicious!

Are they easy to grow as I love eating them but resent paying supermarket rip off prices for small ones.

Jamie Oliver has a recipe for 'poor man's caviar' which is aubergine. Do you want me to find it out for you?

I've been through all my Jamie books and it isn't there, but I definitely remember him making it on one of his early TV programmes.

Anyway - I've found a version made by Silvena Rowe and another couple on a Jewish recipe site, so I'll post those.
