Hi All,
Thought you might be interested in this delious and very easy ice cream recipe. It is egg free, and doesnt need an ice cream machine. It was a made up recipe by my partner who is always up to something new and delicious in the Kitchen.
Jay’s ice cream

Ingredients

400g bar of Cadburys or galaxy chocolate

500 ml single cream

Caster sugar to taste (probably about 1-2 oz)

Gently heat the chocolate in a bowl over a saucepan with a little water in it. Make sure the water doesn’t touch the bottom of the bowl, just the steam. When the chocolate is nearly melted but still has a few lumps in it take it off the heat and continue stirring gently until all melted.

Allow the melted chocolate to cool down to room temperature.

In another, larger, bowl gently whisk the cream and sugar together to dissolve the sugar. Make sure the chocolate has cooled then add it very slowly and gently mixing carefully the whole time you are adding.
When all chocolate has been added and mixed, then whisk until you get the whipped texture you desire.

Dispense into individual or one big serving dish and freeze until solid.

(We use Ramekin dishes which take about 2-3 hours to freeze)

Variations
Vanilla ice cream- Use double cream instead of single and method above but obviously without chocolate and add a few drops of vanilla essence (extract comes out too strong) at the end.

We have put all sorts of things in it. Here are just a few. Let your imagination run ….

Malteasers- try adding a few Malteasers to it before it sets.

Grated chocolate or chocolate chips mixed in just before it goes to into bowls.

Fresh garden mint chopped finely and mixed in just before it goes into bowls gives a lovely fresh minty flavour. Add grated chocolate for mint choc chip…

Raspberry Ripple- Use raspberry coulis bought from supermarkets (Waitrose have it) With a cooks syringe bought from cook shop inject some raspberry coulis into ice cream once in bowls and swirl to create ripple effect.

Hello Country Girl
Just tried your recipe for chocolate ice cream today. Really is superb and so simple! Family were seriously impressed.
I altered it slightly and used 3 x 142ml pots of single cream and 3 x 100g bars of 70% cocoa dark chocolate together with 50g caster sugar.

PS Doesn't do much for our waistlines though!
