Using up Mini Crunch cucumbers

For a simple summer starter:

Cut the small cucumbers cut into boats lengthways, scoop out the seeds with a teaspoon and stuff with cream cheese. Drizzle a small amount of Chinese sweet chilli sauce over the top and serve on a layer of watercress. Pan roasted pine nuts also make a nice alternative topping to the cream cheese.

Great for little canapés for events & you've given me an idea for our work's Bring & Share for those leaving or having birthdays etc.

Dreamed up more in desperation than inspiration at the sight of the growing number of small cucumbers accumulating in the fridge's salad box ! :lol:
