Beetroot with Fresh Mint.

Found this recipe and tried it with my evening meal.It's a bit good!
4-6 cooked beetroot.
30ml/2 tbsp Balsamic vinegar.
30ml/2 tbsp olive oil.
Bunch fresh mint,leaves stripped and thinly sliced.
Slice or dice beetroot,put in bowl,add balsamic vinegar,olive oil,a pinch of salt and toss together to combine.
Add half the mint and toss lightly until combined.Refrigerate.Serve garnished with remaining shredded mint leaves and enjoy!
