Tomato sauce

We have had a lot of tomatoes of various sizes, the big ones were tasteless, for some unknown reason. So over the last two days I have been roasting the tomatoes in a low oven with garlic and thyme and a drizzle of olive oil salt and (tellicherry black peppercorns) (I have discovered these peppercorns in the last 6 months and have been buying it from Tesco's.) The first ones I put through a sieve which was painful. It made about 6 meals. Today I did the roasting of two massive trays of tomatoes but this time I put them through the Nutribullet. What a difference it made a super smooth sauce. Tonight I fried some smokey bacon and onions, cooked some pasta and then stirred through the sauce into the pasta and bacon and onions and a shaving of parmesan cheese. Delish and so cheap.
