This is my new favourite picnic / lottie recipe & easy!

2 or so courgettes grated (or a half or so of an escapee monster)
Good handful of grated cheese
Couple of rashers of bacon cooked & chopped
Few spring onions chopped
1 cup of self raising flour (that's a measuring cup thing not a coffee cup)
5 eggs (4 works as well)
2 tabs of olive oil

Beat flour, eggs & olive oil together.
Add to other ingredients & mix together.

Line loaf tin, pour in ( it's pretty thick not a runny batter), put more cheese & bacon on top.
Bake at 180 degrees Celsius for 30 mins.

Cool & slice & serve with whatever takes your fancy! Great for lunch box!

Thanks that is just what I need having a glut of courgettes and eggs.
