Fennel and feta linguine ala Nigel Slater

I have just made this recipe again and I love it so I thought I would post it. Believe it or not I have had trouble getting hold of fennel. Tesco in Clitheroe does not stock it :shock: So we managed to get it from Sainsbury's in C. £3. odd a kg.

200 g linguine
1 fennel bulb (this depends on how big they are I had to buy 2 today)
1 banana shallot
2 tbsp olive oil
15 basil leaves
100 g feta cheese

He says cook the pasta in a pan of boiling, salted water, according to the packet instruction.

I don't cook the pasta till the fennel and shallot mix is almost ready. Especially the fresh pasta which is done in three minutes.

Slice the fennel and shallot and fry in the oil until soft.
Tear the basil over the fennel and shallot and crumble in the feta
When the pasta is cooked, drain and combine with the shallot and fennel mix.

I save some of the pasta liquid to loosen up the sauce as as soon as you have combined the pasta with the fennel it starts to dry up really quickly so I add a couple of table spoons to the dish and stir.
