This is probably the wrong time of the year to ask, but does anybody do anything useful with their celeriac & parsnip leaves when they harvest them (apart from consigning them to the compost heap?).

I know they have a rather strong flavour but I was wondering whether they could be dried down and used as a herb for flavourings, stews, etc.

I've occasionally put a very small quantity of chopped celeriac leaves in a mixed salad, but have never tried drying them and wonder whether it would be worth doing, and if so, what's the best way of drying them.

Celeriac would be OK, like celery, but I'd be wary of using parsnip leaves as they contain a chemical (furocoumarin) which makes your skin photosensitive - blistering in sunlight. Cooking would probably destroy it, but I wouldn't want to try it.
