Looks like I'm going to have lots of tomatoes to preserve fairly soon and with freezer space being short, I'm wondering about trying to bottle some in their own juice. I don't feel terribly confident about attempting the water bath method but read somewhere that tomatoes can be preserved/cooked in jars in the microwave. Does anybody have any detailed instructions on how this can be done and whether there's any risk of jars being damaged/bursting if this method is used?
I make lots of marmalade in the microwave, should I imagine it's possible but am unsure how one would approach the sealing process.
