Too many parsnips !

Need to dig my remaining parsnips to sow this years seeds crops. I have too many and this was from two year old seed. Any imaginative ideas for using them up please?

Dear Primrose,
parsnip and apple soup
parsnip, squash and red pepper soup
curried parnip soup
parmesaned parsnips
plain roast parsnips
honey and mustard roast parnips
soy sauce garlic ginger and honey roast parsnips
Parsnip mash (with any of the above flavourings)
As you can probably guess I LIKE parsnips any way I can get them (except plain boiled.

Definitely soup! (Do you have a pressure cooker?) then freeze it in portion sizes :)

Dear Primrose,
a tip for freezing soups. When you add the stock cubes they may well melt in the juices from the veggies; if you think that they will, chop the cubes up very finely and stir well to disolve them. By not adding the stock water it will take up less room in the freezer. Or alternativly chop the cubes up and use as little water as you can.

Primrose , put them in a large box tape it up then take it to the post office then send them to me ,i love parsnips :mrgreen: :mrgreen: :mrgreen:

Sally, thanks for the tip about concentrating the soup liquid for freeziing. Good idea !
