Excuse my ignorance but what is a Victorian strainer and how does it differ from a modern
strainer?

Whoops. I stand corrected! Very modern and definitely not Victorian. Should wear my glasses more often!

I have one of those too Retropants, great at removing the seeds and skins from raw toms. I can also recommend their herb chopper, wind the handle type chopper, herbs in at top chopped at the bottom. Can also make a great rub for meat by putting some olive oil in the bottom, herbs and garlic in the top, turn the handle and you have a great rub in mix in about 30 seconds. Simple and easy to clean too.

I use mine for roasted toms too (with onion, garlic and other veg, herbs & oliive oil. it is still easy to clean, just hot soapy water. instant pasta sauce. don't forget the chilies!

Thanks for posting that Retropants - have had such a good year with the toms & was going to google for something to make good sauce without all the sieving & such!
