Short answer - Yes.
Longer answer: Vilmorin-Andrieux, The Vegetable Garden translated into English 1885 says: "The culture and uses of this plant are almost the same as those of the Salsafy. It is more, however, as a curiosity that we mention it, although its rather tender and fleshy root is sometimes used as a table vegetable. It should be employed for this purpose at the end of the first year of its growth, when the plant has put forth only one rosette of leaves."

I have never grown nor eaten it, so rely on you to try and report back.

Thanks Alan. I have a lot plants this year which have self-seeded from a neighbour's garden, and now the flowers are finishing I have started pulling them up. I shall try steaming the roots like carrots and see if it is worth cultivating them in the future.
