bolting winter density

I sowed some winter density lettuce in the polytunnel about six weeks ago and transplanted the seedlings to 3inch pots, then planted them outside a couple of weeks ago. They're already starting to bolt and I wondered how I might have avoided this. (Rouge d'Hiver treated the same way show no signs of bolting) Any suggestions gratefully received.
