Pruning Plum Beauty

I have looked up pruning so have an idea about what I should be aiming for regards an open centre but the little beauty is full of fruit this year. If I do the right type of pruning then it would need some of the fruit being removed, which I'm not prepared to do as they are so tasty.
Would it be OK to just prune back the longer branches that are not bearing fruit now & give my neighbor some sun back then shape it after harvesting?This won't actually be winter so will I risk silver leaf or should it be OK?
