Some courgette advice please

I have two plants of different varieties, one quite compact and the other a real "sprawler" growing in a small space where sprawler is rapidly overcrowding some other veggie seedlings.

Can you prune courgettes back without damaging the plant when it's starting to fruit? If so, what do you remove?. Just the leaf part or the whole stem? And what percentage of the leaves can you risk removing?

Squashes and cukes don't seem to mind you nipping the growing tip out, but they will throw out long side shoots.
