Removing leaves on pepper plants

Need to know the best time to plant?

Have a lot of lush foliage on my pepper plants in outdoor pots and wonder wher I should be removing some of the leaves to allow the peppers to ripen more quickly. I,ve never done so in the past and more recently they,ve helped to protect some of the fruits from scorching in the heatwave.
However, now the temperature,s more reasonable I wonder whether this would be beneficial or serve no purpose. What do others do?

I just leave mine alone. They have just started going red even with lots of foliage. You're more likely to introduce botritis etc if you make wounds on the plant.
