Callaloo - amaranth

I've found this plant to be a very useful spinach substitute over the years. I grow two different varieties, the Caribbean one, quite dark green and robust and an Indian one called Mrs McGhees from the Heritage Seed library which has pale green leaves. I save a few seeds every year but find that they self seed in the greenhouse anyway. They are happy outside after the frosts and you just keep breaking handfuls off so they send out side shoots. It's nice and tender and has a good range of nutrients and doesnt have the earthy taste of chard.

Is it high in iron like spinach, my wife is a low iron type of person and needs extra.

I can't find a comparison with spinach but it does say that it has twice as much iron as broccoli and four times as much calcium.
