Endive starts to flower

Hey everyone,

One of my 6 endive plants is growing a thick stem in the middle and it's growing in height. For all I know this means it's starting to flower, but is it still edible at this point? And should I harvest the other ones as soon as possible so they don't flower too?

Yes you can still eat your endive at this stage. Endive has a slightly bitter flavour anyway but most salad leaves become more bitter when they start going to seed. I suggest completely snipping out the centre stalk now. I would completely use up the flowering plant first and then the others In succession as they start to go to seed, which will probably be soon if they were all sown at the same time.

Thank you! I did the harvest and made a delicious andive stew. So I can confirm, andive when flowering is still very much edible! :mrgreen:
