I sympathise with those who can't knead, as I have arthritis in both thumbs! However, I find that kneading in the bowl is easier than on the worktop, and I don't knead for longer than about 2 minutes anyway (in my experience, it's the rising which makes good bread rather than laborious kneading - so...
