The quantity shouldn't matter, as long as the ratios remain the same. I used 10lb of redcurrants in my first batch of jelly this year and it was just fine. In fact, it is the most perfect jelly I make for consistency, clarity and the right amount of 'wobbliness'. Just never seems to go wrong for me....

Not sure why they are bitter, but I grew up with bitter cucumbers in NZ. I thought the bitterness had been bred out of them since those days. But adding to Sarahlee's comment re peeling them, the other trick is once you have peeled them, run a fork vertically down the outside and all the way around....

Beetroot Dip?

Somewhere I have a recipe for Beetroot Dip, which is very nice. If interested, I will see if I can find it for you. Last night I put raw, grated beetroot into our usual green salad. Wash it in a sieve once grated, strained and dried in kitchen towel. Great for colour and didn't turn the lettuce red....

We've just returned from a wedding in Poland where one course was Kohl Rabi soup. A creamy soup flavourd with dill, it was wonderful. So impressed we're going to try growing it for the first time next year.

Well I haven't read Robin Cook either and Coma was was the only book of his I had heard of. Just completed a search on his books and they do look remarkable similar to Tess's (or the other way around). I'll have to grab a Robin Cook or two and compare the writing styles of the two authors. Is he good?

Hello Vicki - now under 'Recipes'. Not sure about baking them. I have only ever used them in the risotto recipe. I did a quick search and found one recipe that states once stuffed, they can be steamed 'for 3-5 mins', if that helps for an alternative to deep frying.
