Cauliflower disaster

Our first attempt at cauliflowers has resulted in disaster. We left several plants, with small curds, for a weeks holiday. Upon our return, they had not grown but more importantly, had become badly discoloured and mostly soft. Inedible. Someone suggested they lacked protective leaves. Is a plastic p...
