I have been asked to cater for a friends wedding and she has requested chicken dishes, but not the 'usual' you get at most weddings. Anyone got any ideas? It is going to be for a small group of 45 people

Well, I suppose that probably rules out Coronation Chicken, which is a pity as I imagine you're going to have to produce chicken meals that can be prepared beforehand. Is it going to be a cold buffet, or a hot meal?

A few different ideas -
Cubed skewered marinaded chicken breast, with a fruit and nut cous cous or rice cooked in chicken stock saffron / spices ( flaked toasted almonds apricot sultanas? )
Mozzarella stuffed chicken breasts wrapped in parma ham, cranberry or redcurrant wine sauce sauce, new pots and hot broccoi, or salad
Balsamic marinade chicken breast, with salad and mango salsa.
baked chicken with peaches, served with saffron and sweetcorn wild rice mix
