Serves 4-6.

It doesn't come out looking too appetising but it's very tasty.

9oz mixed nuts
butter for greasing
4 small shallots
can of tomatos, very well drained
3 eggs, beaten
5oz cheese of your choice. Should be a good melter
Thyme, sage, mint, parsley to your own taste
2tsp light soy sauce
Salt and pepper.

Method:

Toast the nuts in a dry frying pan until golden. When cooled whizz them in a food processor to a consistancy that you like.
Heat oven to gas 4, 180 and greese a 1lb loaf tin. Line with greesproof and lightly greese that too.
In a bowl, combine all the ingrediants together and give it a good mix around and then plonk into the tin.
Bake for about 50 mins to 1 hour or until golden brown and firm to the touch.

Serve with a tomato, garlic and onion sauce and a salad.
