One of my few successes this year, but I don't know what to do with them. Nugget likes them boiled briefly and in minestrone, but can't think what else to do with them.

any ideas?

And how do I freeze them? Blanched or not?

Hello Malk, if you want to freeze them, they should be shelled and blanched in boiling water for 2 minutes. Then drain & soak in cold water until cool.
You can then either bag them up in convenient sized portion (where they will probably all stick together in a solid block) or freeze-dry them loose on a separate try in freezer until they're hard and then bag up, so you can separate them out a few at a time.
They're good in minestrone. We also often eat them in a warm mixed bean salad (made from tins of mixed beans or red kidney beans) into which you can stir some lightly fried chopped onions, red pepper, mushrooms and a little bacon or tuna chunks.
