Non Mushy Mushy Peas!!

The last of my early peas had grown rather large, it was a toss up between eating them or playing marbles. I decided to eat them and prepared a variation on 'peas in the French style', the result was rather good both for taste, texture and colour.

Saute some small shallots, try not to colour.
Add a drop of vegetable stock,
Add the peas and bring to the boil. (The stock should barely be half way up the peas)
Add some shredded lettuce (this produces a lot of liquid hence the previous comment)
Season to taste
Simmer until well cooked and thicken slightly with cornflour.

I also added a little finely sliced celery with the lettuce
