Strawberry Jelly Cake

Heres a receipe I created over the Easter Bank Holiday:

4oz local organic butter
3oz unrefined sugar
3 oz wholemeal flour
3oz white flour
(use SR or add some baking powder)
2 lge freerange organic eggs or 3 small one ( mine are double yolks at the moment).
1 cap vanilla essence (from Lakeland)
little milk to mix
about 4 - 6 organic strawberries cut in half
1 x sachet strawberry sugar free quick set jelly

Of course you dont have to use local organic if you dont want to. But hopefully the eggs and strawberries are from your own garden!

make up the cake by the creaming method and bake for about 20 mins.

Once cooked, cool on a wire rack.

When it is cool enough, put onto serving plate & decorate with the strawberries, to fully cover top of sponge and make up the jelly.

Poor a generous amount of jelly slowly over the cake, covering all the strawberries. Carefully put in fridge overnight to set.

You will have a yellow & pink cake topped with strawberries, as some of the jelly will run through the sponge. I served with local jersey (cow) cream and a glass of wine! Would go well with vanilla ice cream too.

Next time I am going to make 2 sponges, pour jelly over both & sandwich toghether with Strawberries & cream, may put another layer of strawberries on top & more jelly to hold it, for a more decadent option!
