Well, I've always been the type to be easily distracted! I've been gathering my elderflower heads in order to make the usual 'champagnes' and cordials when I noticed that all my local elder bushes have wild rose growing next to them. I have decided to give the same treatment to the wild roses as I do the elderflowers. I gathered about the equivalent of just under half a gallon volume of rose heads. I then used one gallon of boiled water combined with about 55og of sugar, allowed to cool, then added two sliced lemons and 2 tbsp of white wine vinegar.
It might be a complete disaster :? but I'm curious and wanted to know if anyone else has tried anything similar (ok, ok you can stop laughing now!)

Will update in a wee while after bottling and maturing.

ahem, well, yes it did mature for a little while in my glass :wink: !! all gone now!
