This is best when its crunchy!

You'll need a Jam pan or similar and it makes about 6x1lb Jars.

2lb runner beans chopped into whatever size you want
1.5lb fine chopped onion
1.5pts Malt Vinegar
1.5oz cornflour
1 or 2 tablespoons mustard powder
1 tablespoon other spices to taste (try tumeric, garam masala, chilli powder etc)
8oz soft brown sugar
1lb demerara sugar
salt

Onions in pan with 3rd of the vinegar. Simmer 20 mins (soft). Cook beans separately in salt water for 5 mins. Bung beans into onions. Mix cornflour and spices with a bit of vinegar and put the resulting paste into the beans & onions. Stir a bit.

Pour in rest of vinegar and simmer 10 mins. Put all sugar in and simmer for another 15 mins. Bung into heated, sterilised jars.

Resist temptation for as long as possible and enjoy with anything esp strong cheese & red wine.

Kate did last year's batch with turmeric only. FAB.
