For a simple summer starter:
Cut the small cucumbers cut into boats lengthways, scoop out the seeds with a teaspoon and stuff with cream cheese. Drizzle a small amount of Chinese sweet chilli sauce over the top and serve on a layer of watercress. Pan roasted pine nuts also make a nice alternative topping to the cream cheese.
