Chicken recipes - Help!

Well, I suppose that probably rules out Coronation Chicken, which is a pity as I imagine you're going to have to produce chicken meals that can be prepared beforehand. Is it going to be a cold buffet, or a hot meal?

A few different ideas -
Cubed skewered marinaded chicken breast, with a fruit and nut cous cous or rice cooked in chicken stock saffron / spices ( flaked toasted almonds apricot sultanas? )
Mozzarella stuffed chicken breasts wrapped in parma ham, cranberry or redcurrant wine sauce sauce, new pots and hot broccoi, or salad
Balsamic marinade chicken breast, with salad and mango salsa.
baked chicken with peaches, served with saffron and sweetcorn wild rice mix

She wants hot food so i am going to need to be able to prepare some of it in advance. Thanks for your advice NB, those recipes all sound delicious. I will run them past her and see what she thinks
