Carrot Patties

11ozs main crop carrots.
1 medium sized onion.
1 Clove garlic, peeled and crushed (optional).
6 tblsp double cream.
2 heaped tblsp grated cheddar cheese.
1 heaped tblsp plain flour.
1 tblsp chopped fresh parsley.
Seasoning.
Olive oil.

Scrub the carrots and coursely grate them. A processor is ideal for this purpose.

Peel and grate the onion, using the same coarse blade on the processor.

Stir in the chopped garlic and the grated cheese, cream, flour and seasoning.

Warm a shallow layer of olive oil in a non-stick frying pan. Press the mixture into 6 flattish patties and fry on one side 'til brown. Turn over and cook 'til golden brown on the other side.

Drain on kitchen paper and serve immediately.

I made these on Saturday using Marscapone instead of cream (just because I had opened a tub to add to some risotto) and if anything, they were even better than usual. :idea:
