My first post so hello to everyone out here!
I grew the sarpos this spring/summer, good healthy growth, minor signs of blight that never took hold, relatively good sized spuds, however all I seem to be able to do is make mash with them. As soon as they are boiled they disintegrate into mash.
Any culinary tips appreciated for dealing with them, although I’ll give them a miss, growing them next year.

Steam them.
Then they cook, but do not melt.

I found they were best baked.
Not over joyed with the flavour though.
Only grew them the once.
