Hello Grock, I grow loads of basil purely to make pesto with and this is the recipe I use. I make a freezing in ice cube trays, then put into bags once frozen.

Into a food processor place about:

2 packed cups of basil leaves
1 large clove garlic, peeled and sliced
3/4 cup good quality olive oil
1/4 cup parmesan cheese
salt and pepper to taste
1/4 cup toasted pinenuts or walnuts

Puree until they form smooth paste.
The cow is of the bovine ilk
One end is moo, the other, milk.
