Chocolate Courgette Brownies

4oz butter
4 fl oz sunflower oil
4oz white sugar
5oz brown sugar
3 eggs
4 fl oz sour cream or yogurt
1 teaspoon vanilla
12 oz plain flour
2 teaspoons baking powder
4 tablespoons unsweetened cocoa
1/2 teaspoon ground allspice
1lb courgettes, peeled and grated
8oz chocolate chips
chopped walnuts (optional)

Cream the butter, oil and sugars together until light and fluffy then gradually beat in the eggs.

Add sour cream and vanilla and mix well.

Sift the flour into a bowl and add baking powder, cocoa and allspice. Gently blend the dry ingredients into the creamed mixture.

Stir in the grated courgettes and blend well. Add walnuts.

Spread the mix evenly into a greased 9 x 13 inch greased baking tin. Sprinkle chocolate chips over the top.

Bake for 40-45 minutes in a preheated oven at 350F (180C) until the cake is firm and a knife inserted un the centre comes out clean.

Cut into squares while still warm.

Chantal, I take it you planted too many courgette plants? :D

managed to try this and it was lovely and moist and really rich. Great with a big dollop of double cream on it.
