Dear All,
this is a question for those with long memories. I posted a recipe for curried courgette soup last year and I have lost my copy of it. I have 12lbs of courgettes to use so I need someone to post the ingredients list for me if anyone still has it. Both variations please.

Oh yes please I would like some of that to.
I have been throwing away courgettes (yellow round and long) got so many. Soup sounds good.

If I so much as head towards my plants everyone does a runner.
Oh no not more courgettes.

Hello Sally - here's your recipe. I made it last year and it was great. Also tried it with runner beans and that worked well too.

Curried Courgette Soup


2lb diced courgettes
1 oz butter
1 tbsp coriander powder
1 tbsp curry powder
1 tbsp honey (any kind)
2 pints chicken stock

Fry the courgettes in the butter and when they are soft add the other ingredients. Stir well. Add the stock and serve as is, or puree. To freeze this soup, don't add the stock cubes as liquid, but chop them up and stir them in. Saves on freezer space.

For the benefit of others, Sally (in her orignal posting), replaced the curry powder with 1 tsp each of garam masala and fenugreek.

thankyou, I am chopping courgettes as we speak. I found it so good that I had to "ration" myself to make last years supply last until I could make some more. How sad is that!

Here are some steps Curried Courgette Soup Curried Courgette Soup:

Heat the oil in a large pot. Stir in the onion, and season with curry powder and salt. Cook and stir until onion is tender. Stir in zucchini, and cook until tender. Pour in the chicken stock. Bring to a boil. Cover, reduce heat to low and simmer 20 minutes.
Remove soup from heat. Use a hand blender, or transfer in batches to a blender, and blend until almost smooth.
