SPICED POTATO CURRY AND POACHED EGG
250g waxy potatoes cut into 1cm cubes
2 tbsp oil
¾ tsp black mustard seeds
½ tsp cumin seeds
Medium onion chopped
Chopped ginger
Chilli
½ tsp turmeric
½ tsp ground cumin
½ tsp ground coriander
Seeds from one green cardamom crushed
110 ml water
Salt
1 tomato chopped
1 tsp lemon juice
Chopped coriander leaves
Cook potatoes till almost tender, drain
Heat oil and add mustard and cumin seeds
Add onion, ginger and chilli
Cook 6-7 minutes till soft but not brown
Stir in turmeric, ground cumin and coriander and cardamom seeds
Cook for a minute
Stir in potatoes, water and salt and simmer for 10 minutes
Stir in tomato and lemon juice and cook for two minutes
Stir in almost all the chopped coriander
Serve topped with poached egg and garnished with chopped coriander
